Late Winter and Early Spring Planting Guide

The new year is here—and if you’re anything like us, you’re already dreaming of spring harvests. 
This seasonal planting guide is designed to help you
plan ahead, plant with purpose, and grow more of your own food, herbs, and medicinals in 2026.

What to Grow in Zone 8b/9a -January through March

DIRECT SOW   

  • February: Direct sow arugula, cabbage, carrots, collards, English peas, potatoes and turnips. 

  • March: Direct sow arugula, cantaloupe, carrots, corn, English peas, potatoes and turnips. 

GERMINATE INDOORS  

  • February: Start kale, lettuce, mustards and other greens indoors in February for transplanting outdoors in late February/early March.

  • March: Start cucumber, eggplant, peppers, summer squash, tomatoes and watermelon indoors for transplanting in late March/early April.

TRANSPLANT

  • January: January is the last winter month in which to transplant vidalia or granex onions.

  • February through March: It's tree time! Transplant apples, blueberries, figs, native grapes (muscadine), jujube, peaches, pecans, persimmons, plums and walnuts.
